Thank God, finding easy no-cookor less time-consuming dinner recipes for hot summer nightsis no longer a flip through heavy cookbooks but just a Google search away.There is a sea of options to pick from, and you won’t be able to exhaust them all in one summer.

In this article, I have shared my top 3 repeated recipes, which I find to be healthy, filling (for the boys at home), and requireless cooking time than any other dishes. 1.    Egg Salad &Smoked Salmon Croissant

Prep Time: 10 min

Serving Size: Makes 6

Calories per Serving Size: 533 calories

Ingredient List Process
·       ¾  Mayonnaise

·       1 tsp dill weed

·       ½ tsp lemon juice

·       ¼ tsp salt

·       1/8 tsp pepper

·       6 hard-boiled large eggs chopped into bits

·       4 ounces of smoked salmon or even pan-seared

·       6 croissants split in half

·       1 or ½ cup baby spinach (omit if you don’t like it)

1.       In a large bowl, mix all the dry ingredients, mayo, and then stir in the eggs and salmon too.

 

2.       Place 1/3 cup of the egg mix on each of the croissant bottoms, add spinach leaves, and then place the tops. Voila! It’s ready.

 

3.       Just omit the spinach leaves if you don’t like them, you can add other salad leaves or something else you prefer (maybe cheese, like I do)

2.    Cherry Tomato Pasta

Prep Time: 10 min

Cook Time: 10 min

Total Time: 20 min

Serving Size: Makes 3 to 4 servings

Calories per Serving Size:376 calories

Ingredient List Process
·       8 ounces of pasta (penne, rigatoni, or any type you like)

·       3 tbsp. olive oil

·       2 pints of whole cherry tomatoes

·       1 tbsp. balsamic vinegar

·       Kosher salt to taste

·       Ground black pepper to taste

·       2 cloves garlic (large)

·       ½ cup grated parmesan cheese (divide in 2 parts)

·       ¼ cup pasta water from boiled pasta

·       Handful of fresh basil leaves (chop if you like them that way)

1.       Boil the pasta until it is al dente (7 to 8 minutesusually). Save the pasta water before draining.

 

2.       Blister the tomatoes in a pan. Add 2 tablespoons of olive oil to a large, heavy skillet over medium heat. The tomatoes should not touch each other. Cook the tomatoes for 1 min and then blister the tomatoes for 2 3 min.

 

3.       Turn off the heat and drizzle with balsamic vinegar, shaking to coat evenly. Add 2 pinchesof kosher salt and fresh ground black pepper to taste. Remove the tomatoes to a bowl.

 

4.       In the same dish used to cook the tomatoes, add the remaining tablespoon of olive oil and garlic until fragrant.

 

5.       Add the pasta water, deglaze the pan with the tomato juices left, and then turn off the heat. (Phew, now only the cooler steps are left)

 

6.       Add the pasta and toss to coat. Then add the tomatoes, ¼ of the parmesan cheese, and basil. Now season with some salt if you like.

 

7.       Serve in a bowl with the remaining Parmesan cheese.

 

Tip: You can add some leftover grilled chicken from the fridge, some sausages on the side, or some frozen meat item of your choice for extra protein.

3.    Nectarine Chicken Salad

Prep Time: 15 min

Serving Size: Makes 4 servings

Calories per Serving Size: 266 calories

Ingredient List Process
·       ¼ cup lime juice

·       1 tbsp. sugar (you can use brown sugar or stevia)

·       1 tbsp. minced thyme (fresh) or 1 tsp. dried

·       1 tbsp. olive oil

·       1 clove of minced garlic (or 2 if you like the garlicy taste)

·       6 cups of salad greens (variety of the ones you like)

·       1 pound boneless skinless chicken breasts (grilled or chargrilled) sliced up

·       5 medium ripe nectarines sliced thinly

1.       Combine lime, sugar, thyme, oil, and garlic in a leak-proof jar and shake well.

 

2.       Get a serving dish or bowl and arrange the greens, chicken, and nectarines. You can add some other veggies to it if you like. Drizzle the salad dressing. Serve fresh.

 

Tip: To keep the salad green and crunchy, dust off all the water residue.
